What a wonderful year it has been for Georgia Grinders; we are so excited for what's to come in 2020 with all of you!Hindsight is 2020, so this is the year of CLARITY! If you are starting this year focusing on incorporating more nutritious recipes into your diet, we are always here to help with some inspiration! First things first, we have been loving this Creamy Vegan Caesar Salad Dressing made with our Creamy Cashew Butter. It is such a fun, healthy twist on a classic favorite. To make, you will need:
1/3 cup @georgiagrinders Creamy Cashew Butter
1 tbsp olive oil
juice of one and a half lemons
3-4 tbsp nutritional yeast
2 tsp capers
4-5 tsp dijon mustard
1/3 cup + 2 tbsp water (or until dressing is at desired consistency)
1 tsp apple cider vinegar
1 clove minced garlic
pinch of salt to taste
Put the ingredients into a food processor or blender and blend until creamy! To complete the salad, massage a head of kale with a little olive oil and lemon juice. For the toppings, drain and rinse a can of chickpeas and bake them with salt, pepper and garlic powder for 20-25 minutes on 400F until crispy. Put the dressing on the lettuce and then the chickpeas so they don’t lose their crunch. You can top the salad with hemp seeds, more nutritional yeast, or parmesan if you are not vegan.
